i need to replace my thermostat, should i go with the stock rated 195 degree or should i go with a lower 160 degree...
please let me know.

160 will keep your engine cooler, therefore more hp

160 might be alittle low depending on where you live, try a 170-180 for the best of both worlds. Computer cars like a cooler temp because of sensors that set timing through the computer based on temp. Non-computer setups need a 190 or so, Chevrolets love to run between 190-205, thats were the best power is made.

Don't go any lower than a 180 Tstat with a stock computer setup, If you put a 160 in you may have problems with the car getting into closed loop, or it running rich..
Especially not in a V6 car

This is very true...I learned it the hard way. I used to always put 160 stats in my old carbed cars and they ran great! I did the same thing to my 305 TBI Formula with the stock computer...and it ran like shit http://www.3rdgen.org/ubb/frown.gif
I put back in a 180 with a Stage 1 Jet Chip and it was much happier. If you want to run the car cooler with a 160 stat make sure to get the chip that is designed to work with that operating temperature (like the JET stage II or Hypertech Thermo-master).
BTW, When I put in my carbed 383 I will be running a 160...no more ECM to worry about http://www.3rdgen.org/ubb/smile.gif

That carbed 383 will run to cool with a 160* stat to make power.

Hmm. I've been running a 160* stat in mine now for about one year now. Havent had any problems that I think would relate to the low temp stat. What do you mean by getting into closed loop?
P.S. I have a stock 305TPI.

With the stock radiator and stock single fan setup the 160 will be just fine. It'll probably run at 180 around town anyway.

I have been running a 160* in mine too for about a year with no problems. I think maybe it's just a tbi thing.
